Cocktail Ice Lollies



Nothing can beat sipping a cold cocktail on the poolside in the beautiful sunshine, but that still doesn't stop me from shaking up a cheeky 'Sex on the Beach' on a Friday night. This recipe is a twist on the naughty-but-nice drink for a treat on these heatwave evenings.

You will need:

1 Measure Vodka

2 Measures Orange Juice

3 Measures Cranberry Juice

Dash of Lemon Juice

This recipe makes six (shot glass size) ice lollies.

Note: Traditionally a 'Sex on the Beach' also has 1 measure of Peach Schnapps, but I tend to leave this out. You can easily make this cocktail into a mocktail by leaving out the Vodka and adding a little more of the two juices.

Pour all of the liquids into a jug and stir well. Then pour equal quantities into shot glasses and pop them in the freezer.


After a few hours, give all of them a quick mix to break up the ice and put them straight back in the freezer. After another couple of hours, push ice lolly sticks into each one and leave to freeze over night. I didn't have any of these so I cut a couple of wooden cake dowels into smaller sections and sanded the ends.

Obviously you can use normal ice lolly moulds but I find that shot glasses are just the right size for these alcoholic lollies.

You can serve the ice lollies in their shot glasses for a quirky look (this is handy for a holder and to catch drips too!). Simply warm the glass slightly with your hand and twist the lolly to release, then enjoy!
